Plume Luxe 5" Utility Knife is a medium-sized knife, sometimes referred to as a “petty knife”. It’s a favorite tool when precision cuts are needed, it can be used as in the hand as on the cutting board. The knife is made of Japanese AUS10 Damascus steel blade and contains Vanadium, which improves the wear resistance and ease of sharpening. While high-quality knives are in the 56 to 58 HRC range, this knife has increased hardness to 62 HRC! As a result, Plume Luxe classifies as an exclusive knife with high toughness, high sharpness, and exceptional corrosion resistance.

Looks and feels nice while having a good edge on it. I wanted to buy a good quality knife but not spend a fortune and this seems to be a pretty good mid range knife for that. Will probably get this brand when I want to upgrade my 8inch chef knife next.

This is the knife I turn to for most kitchen prep. I've only sharpened it twice in the months I've owned it. I do hone it before each use, probably out of habit more than necessity. I really enjoy using this knife.
