We finally broke out this knife set to make chicken noodle soup. The first thing we cut was carrots, and several of the knives did a fine job. Then we thought that wasn't really a fair first test, so I used the Santoku knife to cut a frozen chicken breast flat across the middle, and the knife moved through it like butter. It's been a long time since I have used a knife that cut through frozen chicken that easily. The knives just feel good in my hand. They are lightweight and feel well balanced, and I really like the grip. I actually put them back in the box and stashed them away so nobody else will use them. I am just not ready to share, yet!
